After fermentation, the cherries are subjected to meticulous sun-drying using raised beds and protective cocoons to regulate airflow, temperature, and humidity.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe lot is sourced from select smallholder farms in Ermera, where long-established practices and careful cherry selection support consistent quality. Processing and consolidation take place ar the Railaco facility in Ermera District, operated by Timor Global, one of Timor-Lestes's longest-standing coffee exporters.
