This coffee comes to us from Jairo Arcila’s Finca Villarazo. Jairo’s coffees have always impressed us and this lot is no exception. The coffee was handpicked, selecting only the ripest cherries, then transported to La Pradera, Cofinets processing station. The coffee was fermented for 24 hours then placed in grainpro bags for a further 60 hours of anaerobic fermentation with the sealed bags being placed in water tanks to maintain a stable 22 degrees C for the duration. The coffee was then laid out on raised beds until ideal moisture content was reached. Finca Villarazo is situated in Quindio, Colombia at an altitude of 1450 masl and this lot is Variedad Colombia.
