NATURAL - CONTROLLED  FERMENTATION 43C

This exceptional lot of coffee comes to us from Jhone Milanez Lacerda's Sitio Santa Rita. Established in 1896 by Jhone's grandparents then taken over by his parents, where in the late 1960's all the coffee trees were removed in order to eradicate Broca, a borer beetle that eats into coffee cherry seeds, which was widespread throughout the region. By the early 1970's the first crops post eradication were planted. In 2005 the family decided to focus on producing Specialty grade coffees, developing pre and post harvest processes resulting in spectacular results in the cup. The farm is situated on the border of Minas Gerais and Espírito Santo states at an altitude of 1250masl. This lot is 100% Yellow Caparao varietal and has been through a controlled fermentation process at 43C to enhance the fruit notes present in the coffee.
