NAZARIO REALPE (COLOMBIA) WASHED PROCESS

This coffee comes to us from Nazario Realpe’s farm El Trapiche, located near La Union in Narino, Colombia at an altitude of 1850 masl.
This 100% Red Bourbon varietal lot is harvested following strict ripeness criteria, after harvesting, the coffee is floated and hand sorted to remove any defects. The cherries are then exposed to 30 hours of underwater fermentation before being depulped. The parchment coffee is then gently washed and later dried under temperature controlled conditions until ideal moisture content is achieved.
