ANAEROBIC NATURAL


This exceptional Arabiica natural lot undergoes extended anaerobic fermentation in sealed, oxergen-limited tanks for 48-72 hours. this controled, oxergen-free enviroment allows unique microbial activity to develop layered complexity, intensifying fruit esters, vibrant acidity, and nuanced sweetness while preserving the coffee's intrinsic terroir. After fermentation, the cherries are subjected to meticulous sun-drying using raised beds and protective cocoons to regulate airflow, temperature, and humidity.  The lot is sourced from select smallholder farms in Ermera, where long-established practices and careful cherry selection support consistent quality. Only ripe red cherries are hand-picked, hand sorted, washed and density sorted by flotation to remove underripe or low-density fruit. Processing and consolidation take place ar the Railaco facility in Ermera District, operated by Timor Global, one of Timor-Lestes's longest-standing coffee exporters. Centralised processing ensures consistency, quality control, and improved market access for smallholder producers, highlighting the growing role of experimental natural coffees in Timor-Leste's specialty sector.
