Process - Natural
Della is situated in the Sidamo region, approxi- mately 450 km from Ethiopia’s capital. Addis Ababa. Varieties 74158 and 74112, designated by the Jimma Agriculture Research Center, are well-ba- lanced coffees with smooth bodies. This lot comprises beans from various coffee farmers in the region. The coffee was sun-dried on raised beds, each 1.20 cm in height, with a plastic net thickness of 3-5 cm. This design allows the coffee beans to dry evenly over a period of 10-14 days until they reach the ideal moisture level.
